Resourceful Recipes: Shrimp Kebob Sheet Pan Dinner

On the hunt for an easy and healthy dinner solution? It’s especially tough during the school year to meal prep. Shrimp is the perfect light, yet filling protein to incorporate. 

Today, we have taken on the role as your sous chef by sharing one of our favorite ways to use leftover kebobs! Order our NEW Shrimp Kebobs and add to one of our favorite sheet pan dinner recipes to make dinner stand out. 

INGREDIENTS 

  • 6 Shrimp Kebobs (from Taziki’s) 

  • 2 Tablespoons Olive Oil 

  • 2 cups Broccoli Florets 

  • 1 Medium Zucchini Cubed

  • 1 Medium Potato Cubed 

  • 1 Medium Carrot Cubed 

VEGGIE SEASONING 

  • 1 tsp Salt and Pepper

  • ¼ tsp Paprika

  • 1 tsp of your favorite seasoning blend (oregano, basil, thyme and/or rosemary work well)

INSTRUCTIONS 

  • Preheat oven to 425 degrees 

  • Line a sheet pan with aluminum foil 

  • Toss the veggies in olive oil and seasoning in a separate bowl

  • Place the seasoned veggies onto the sheet pan 

  • Bake for 15 minutes 

Lastly, add your Taziki’s Shrimp Kebobs to top your delicious veggies. Say goodbye to preparing and peeling shrimp and hello to easy low carb dinners!
